Sun Moon Lake, home of the last indigenous people of Taiwan, harbours beautiful sunsets as well as a superb, darkly fermented oolong.
Intensely maroon-colored, the even-sized pellets yield elegant amber liquor that smells intensely of dark chocolate and liquorice. Yet in taste, these heavier tones are interlaced with a surprising touch of acidity and offset by a slightly brisk feel to prove that this is a full-bodied oolong. Throughout the brews, the taste brightens and freshens. As the more distinct taste fades to the background, the summer-like qualities of orange and mineral briskness taking over.
