Medium-sized and modestly roasted, the Cui Feng is another tea that draws its character from the soil it grew from rather than the craft with which it was cured. Even the shortest steeping time dons liquor intensely pine-fresh, and topped off with a rich and roast sweetness that does not disturb this tea’s strengths: a pure and invigorating freshness, modestly brisk and infused with a fleeting tinge of coffee-like bitterness.
Heavier brews deliver a tea that bursts with the full force of its mountainous origin, intensely fresh and infused with a sharp twang of iron ore, a taste that lasts throughout many brews though never too brisk, and always topped off with that same rich sweetness that balances out its heavy, mountainous essence. If it’s a wake-up call you’re looking for, this is undoubtedly it.
